Red Beans and Rice
2 Cups red kidney beans
1 Cup chopped onion
1 Bay leaf
½ Cup sautéed vegan smoked ham
½ Cup chopped fresh garlic
½ Cup diced green peppers
½ Cup diced celery
8 Cups water
Salt to taste
- Put all ingredients into water.
- Cook in pressure cooker for 30 minutes at high pressure. (Always check for doneness according to taste)
- Serve over steamed brown rice
