Red Beans and Rice

2 Cups red kidney beans
1 Cup chopped onion
1 Bay leaf
½ Cup sautéed vegan smoked ham
½ Cup chopped fresh garlic
½ Cup diced green peppers
½ Cup diced celery
8 Cups water Salt to taste

  1. Put all ingredients into water.
  2. Cook in pressure cooker for 30 minutes at high pressure. (Always check for doneness according to taste)
  3. Serve over steamed brown rice

Yields: 12 servings
