Jamaican Curried Goatee

1/4 cup vegetable oil
1 large onion, thinly sliced
3 cups veggie mutton
2 potatoes peeled and cut into large 1 inch chunks
2 carrots cut coarsely into 2 pieces
2 stalks of celery cut roughly into 2 pieces
1 1/2 Tbs. curry powder
1 tsp salt
Sprig fresh thyme
Dash allspice
1/4 cup ketchup
1/4 cup red wine
2 cups water

  1. Sauté onions in vegetable oil
  2. Add veggie mutton and brown
  3. Add all other ingredients, scraping side of pan
  4. Cook, uncovered, on medium/low heat for 30 minutes. Do not let boil.
  5. Serve over brown rice or with coconut rice and plantains.
